Käferbohnen Schaumsuppe

Zutaten für
Personen
Suppe:
400g Käferbohnen gekocht
1 Zwiebel, Knoblauch, Öl
1,5l Käferbohnenwasser
(oder Gemüsefond)
Kümmel, gemahlen
1 Schuss dunkler Balsamico
Muskatnuss, Majoran
400g Créme frâiche
16-24 Lardoscheiben
Käferbohnen-Sponge:
200g Käferbohnen, gekocht
100ml Fond, 70g Mehl
40g Mehl Butter, flüssig
3 Eier, Salz, Kümmel
Kernölsauerrahm
250g Sauerrahm
Steirisches Kürbiskernöl, g.g.A.
Salz
1 Schuss weißer Balsamico
1 Prise Zucker
Pfeffer aus der Mühle

Cooking

12 scarlet runner beans set to side for decoration

For the soup, saute onions and garlic in oil, add scarlet runner beans then add cooked water, caraway seeds, vinegar, nutmeg, fresh herbs , let simmer.
Add Sour cream and mix well.

For the scarlet runner beans-sponge add all ingredients mix well, passieren, fill in a ISI Gourmet Whip.

Pour into greased microwave dish and let cook at medium setting for approx.. one minute, afterwards set aside and keep warm.

For the pumpkin oil sour cream add all ingredients and mix with a wisk.

Spread Pumpkinoil sour cream mixture on dish , scarlet runner bean-sponge, place single scarlet runner beans and pork lard. Pour soup into bowl.

Tipp: Decorate 1 tbsp bacon fat (bacon with onions garlic in warm skim milk one hour drain, add salt and wisk
